{"id":3625,"date":"2018-08-24T09:18:42","date_gmt":"2018-08-24T07:18:42","guid":{"rendered":"https:\/\/sweetzerland.net\/?p=3625"},"modified":"2019-10-08T07:24:50","modified_gmt":"2019-10-08T05:24:50","slug":"sourcing-au-coeur-des-terroirs-dexception","status":"publish","type":"post","link":"https:\/\/www.sweetzerland.net\/fr\/chocolat\/sourcing-au-coeur-des-terroirs-dexception\/","title":{"rendered":"SOURCING AU COEUR DES TERROIRS D&rsquo;EXCEPTION"},"content":{"rendered":"\n<p>Chez Sweetzerland, une attention toute particuli\u00e8re est port\u00e9e au sourcing des mati\u00e8res premi\u00e8res.<br>Derri\u00e8re nos cr\u00e9ations il y a des produits d\u2019exception, des terroirs, des histoires d\u2019hommes et de femmes, des passions partag\u00e9es.<br>S\u00fbrs que la cr\u00e9ation d\u2019un bon chocolat passe \u00e0 travers la connaissance de ces histoires, nous recherchons des saveurs authentiques qui r\u00e9v\u00e8lent l\u2019essence de leur terroir, avec l\u2019ambition de transmettre une \u00e9motion.<\/p>\n\n\n\n<p>C\u2019est en juillet dernier que notre Cr\u00e9atrice chocolati\u00e8re et notre Chef de production sont all\u00e9s rendre visite \u00e0 nos producteurs d\u2019amandes et pistaches, en Sicile.<br>Les&nbsp;<strong>amandes de Val di Noto<\/strong>&nbsp;ainsi que les&nbsp;<strong>pistaches vertes de Bronte D.O.P.<\/strong>&nbsp;sont&nbsp;<em>Presidi Slow Food<\/em>(mouvement mondial qui s\u2019engage pour la biodiversit\u00e9, la production durable et l\u2019\u00e9quit\u00e9).<\/p>\n\n\n\n<p>Concetto, 33 ans, nous accueille dans sa ferme familiale, dans ce coin de Sicile qui a gard\u00e9 son c\u0153ur d\u2019antan. D\u00e9cor\u00e9 des typiques murs en pierres s\u00e8ches, au milieu de citronniers, oliviers, caroubiers, figues de barbarie et, bien s\u00fbr, amandiers, nous d\u00e9gustons un d\u00e9licieux lait d\u2019amande maison et d\u00e9couvrons le parcours de ce jeune homme qui travaille en biodynamique.<br>Concetto nous r\u00e9v\u00e8le alors tous les secrets de ces amandes d\u2019exception : de la vari\u00e9t\u00e9 Romana, la plus ancienne, \u00e0 la Pizzuta ; plus qu\u2019un m\u00e9tier, c\u2019est une passion et un lien tr\u00e8s fort avec sa terre natale que nous d\u00e9couvrons !<\/p>\n\n\n\n<p>C\u2019est avec des \u00e9toiles plein les yeux que nous partons, cette fois, \u00e0 la d\u00e9couverte de l\u2019or vert de la Sicile.<\/p>\n\n\n\n<p>Direction Bronte, sur les pentes de l\u2019Etna, \u00e0 la rencontre de la famille Bonaccorso.<br>Loin de l\u2019image de petits arbustes fleuris, c\u2019est une plante vigoureuse aux racines qui percent la roche lavique qui se pr\u00e9sente \u00e0 nous.<br>Le terrain volcanique et le climat torride ont fait de ce fruit un produit rare et pr\u00e9cieux, aux ar\u00f4mes et saveurs uniques.<br>Une r\u00e9colte exclusivement \u00e0 la main car dans les \u00ab&nbsp;<em>lochi<\/em>&nbsp;\u00bb (pistachiers, en dialecte local), le terrain est accident\u00e9 et en pente et les petits fruits \u00e9meraudes difficiles d\u2019acc\u00e8s. Repr\u00e9sentant 1% de la production mondiale, leur r\u00e9colte a lieu une ann\u00e9e sur deux et doit r\u00e9pondre \u00e0 un cahier des charges bien pr\u00e9cis, afin d\u2019obtenir le label D.O.P.
